LENTIL BURGERS

Ingredient Amount
Red Lentils Six Ounces
Brazil Nuts Three Ounces
Breadcrumbs Two Ounces
Large Egg One
Yeast Extract One Teaspoon
Mixed Herbs Half Teaspoon
Method
  1. Just cover the lentils with water and cook slowly until soft, topping up water if necessary but making sure that they are fairly 'dry' when done.
  2. Add to the lentils: ground brazil nuts, breadcrumbs, yeast extract, herbs, seasoning.
  3. You may also add finely diced garlic and or mushrooms.
  4. Add the beaten egg.
  5. The mixture should be quite stiff and be shaped into 'rounds' - use a suitable pastry cutter or other utensil to shape the mixture.
  6. Adding some white flour to hands / utensils helps with this procedure.
  7. Fry the burgers slowly in vegetable fat or coconut oil. Cook right through on one side first, then the other. Avoid 'flipping'.

Best served warm with salad etc
